You want to have fruits, vegetables which will not add too much calorie yet will be tasty and fast to cook, a perfect balance and blend. I face such problem many a time so always try to find out some unique recipes that meet all my need.
While I am going through Vegetarian Times I found this delicious recipe . I hope you will like it. This layered dish is a simple, satisfying mixture of apples, potatoes and onions.
Crisp, sweet apples 2 large cored
andsliced 1⁄4-inch thick
Red or white boiling potatoes 2 lb. sliced 1⁄4-inch thick
Vegetable oil 2 to 3 tsp
Salt to taste
Freshly ground black pepper to taste
Red onion 1 chopped
Nutmeg freshly grated
Preheat oven to 350F. Oil bottom and sides of large, cast-iron skillet or baking dish. Arrange layer of potatoes in skillet. Sprinkle with salt, pepper and half of the onions. Place layer of apples on top, using half of the apples. Repeat layers, ending with layer of apple slices. Sprinkle with nutmeg, and press down mixture
with plate. Remove plate. Bake until apples are tender and potatoes are crispy and brown, 35 to 40 minutes. Let cool 10 minutes before cutting into wedges. Serve warm.
