Coffee Cake with Chocolate Frosting


Coffee flavored cakes in a friendly tea party is one of my favorite. I must admit that I am still nurturing my skills to develop a picture perfect cake but yet on the half way. But sometimes your underdeveloped skills get blessing and you create wonder. I thought making some coffee flavored cakes and truly speaking though the cake is not that piece of beauty but it taste good. I try to keep it low fat and healthy so that all those who stay away from this sinful delight can relish a small piece. I hope you will love my coffee cake with chocolate frosting.



Ingredients
Flour 220
Sunflower oil 180 ml
Caster sugar 270g
Eggs 3 large
Instant coffee 1tbsp
Walnut 50g toasted and chopped
Milk 100g
Cocoa 1tsp
Baking powder 2tsp

Frosting
Greek yogurt   ½ cup
Semi sweet dark chocolate  ½ cup
Sweet chocolate syrup  ½ tsp
Powdered coffee  ¼ tsp

  Procedure:
 Dissolve the coffee in the milk. Now put the walnut, cocoa and 20g of flour in your processor and process till the nuts are finely ground. Take a large bowl and then whisk the oil, sugar, milk, coffee and eggs until all the ingredients emulsify. Now add the plain flour and baking powder, then add the groundnut mixture; whisk till they are well combined. Preheat the oven to 190C. Grease and prepare the cake tin and pour the mixture, bake for 20 minutes or until it is fully done. Meanwhile prepare the frosting. Melt the semisweet dark chocolate and let it come to room temperature. Take a medium bowl mix Greek yogurt with chocolate sauce, coffee powder and then fold the melted chocolate in it. Mix until it is smooth and creamy. Let this frosting stand for 10 to 12 minutes and thicken before spreading. Top this delicious coffee cake with a glazed cherry and shaved chocolate flakes. I am sure you will love this low fat coffee cake with chocolate frosting.
